Hi, I want to set up an lnd watchtower server, will it work if i just let it run without opening any channel?

You can absolutely set up an LND watchtower server even if you don’t have any channels open yet. The watchtower will be ready to monitor and protect your channels once you do open them.
However, keep in mind that running the watchtower on the same server where you have your channels isn’t ideal. If that server goes offline, both your channels and the watchtower will be down. For better reliability, it’s best to run the watchtower on a separate server to ensure it’s always online and ready to protect your channels.

What if I never open a channel, ever, on that watchtower server?
You have the right idea. A watchtower on your node with your channels serves other nodes you allow to use it. While a watchtower that you want to use for your channels would be on a remote node.
Typically you’d use a friends and they’d use yours. But maybe…
