I am looking at using my Embassy box to host mastodon. But, it doesnt seem that there is much to do. I try to follow others on other mastodon servers. But it seems that I cant follow anyone. Does this only work for other mastodon servers working on onion addresses? Right now, it doesnt seem that I can do much with it.

Yes. Only Mastodon instances that are capable of federating over Tor are the ones that you can follow and interact with.
