I’d love to be able to self-host my own Standard Notes server. Would need to be able to import my already-created notes, hopefully!

Have you reached out to the Standard Notes devs yet in regard to this? You can also upvote it here and show them that there is demand - https://s9.altweb.me/ - it’s currently the 4th highest request and the highest that is actually immediately possible. In the meantime, you can use Joplin or Nextcloud Notes in conjunction with Nextcloud.
